I believe you crave foods your body is nutritionally lacking. No. I am not a Nutritionist, however, if I had to do it all again, I would definitely consider studying Nutrition. I also believe in the POWER of FOOD. My favorite motivational books for eating healthy are “Superfoods Rx” by Steven Pratt, MD and Kathy Matthews and their follow up, “Superfoods Healthstyle.” These books detail the health benefits (aka power) of certain superfoods for example; blueberries, beans, tea, tomatoes, walnuts and even-dark chocolate. If given the choice, I would much rather use food as medicine than pharmaceuticals. There is something empowering for me when I eat healthy not to mention, the overall great feeling.
So back to my salad craving, maybe I am missing some nutritional balance, because I am craving SALAD!
Mixed Greens with Avocado, Tomatoes, Beans and Feta
serves 2 for lunch
3 handfuls of mixed baby greens
(I used a prepackage from Wholefoods that included; red and green romaine, oak leaf, chard, mizuna, arugula, mache, frisee and radicchio)
15 grape tomatoes, halved
1/2 cup white canned kidney beans, drained and rinsed
1 Hass avocado, pitted & sliced
2 spring onions, white and light green part chopped
Feta cheese, crumbled
Vinaigrette
two pinches of kosher salt
freshly ground black pepper
1 teaspoon Rolands whole grained Dijon Mustard
2 tablespoons red wine vinegar
6 tablespoons Greek extra virgin Olive oil
Whisk salt, pepper and mustard together. Add red wine vinegar, and then slowly whisk in olive oil.
1. Put salad greens in a large bowl and add just enough vinaigrette to lightly coat the greens. Toss gently.
2. Plate the salad and add the toppings to each salad.
