Less than 10 hours and counting until the Royal Wedding of William & Catherine. I will try to get up at 4:00 a.m. to be among the first to see the dress and any and all other highlights streaming from across the pond. I must admit, thanks to the media, I am rather curious and excited.
So if I am going to drag myself out of bed, I thought a British inspired breakfast would be appropriate. Nothing too complicated and well, “Food & Wine Magazine” has come up with a healthy version – Strawberries (always part of the breakfast at Wimbledon) + Scones (that’s British) = Breakfast while watching the Royal Wedding!

Strawberry Scones
Summer Strawberry Scones perfect for watching Wimbledon!
Ingredients
- 1-1/2 cups unbleached flour
- 1-1/2 cups whole wheat pastry flour
- 1/4 cup sugar
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 4 oz. cold unsalted butter (cut into small cubes)
- 1-1/4 cup butter milk ( + 3 tablespoons for brushing)
- 1/2 teaspoon pure almond extract
- 1-1/2 cup strawberries, sliced
- 2 tablespoons turbinado sugar
For the Topping:
- 1/3 cup sliced almonds
- 1-1/2 cup confectioners' sugar
- 3-6 tablespoons buttermilk
- 1/2 teaspoon pure almond extract
- pinch salt
Instructions
- 1. Preheat the oven to 400 F and line 2 baking sheets with parchment paper.2. In a large bowl combine both flours, 1/4 cup sugar, baking powder, baking soda, and salt. Mix well with a whisk. Add the butter and using a pastry cutter blend the butter into the dry ingredients until it resembles a fine crumble consistency. With a spatula mix in the buttermilk and almond extract. Gently fold in the strawberry slices.3. With an ice cream scooper, scoop the dough onto the baking sheets. Brush them with the buttermilk and sprinkle with turbinado sugar. Bake for 30 minutes. Cool on a rack.4. After the scones are baked, lower the oven temperature to 350 and spread almond slices on a parchment line baking sheet. Bake for 8 minutes.5. In a small bowl mix confectioners' sugar, buttermilk, salt and almond extract. Add more or less buttermilk to get icing consistency of your choice. Drizzle over cooled scones and then top with almond slices.
I am sure these were delightful! I wish I had some to nibble on during the Royal Wedding.
