Ingredients
4small headslittle gem lettuce, washed
1/4lb.radicchio, washed
2tablespoonsred wine vinegar
1/3cupextra virgin olive oil
1teaspoonfresh thyme leaves
1/2 +teaspoonsaltor to taste
freshly ground black pepper
1/2cupcelery hearts, finely diced
3tablespoonsshallots, finely minced
3/4cupfennel, thinly shaved
1/2cupGruyère cheese, thinly shaved pieces
1/2cuporange segments
Instructions
In a small jar, add the olive oil, vinegar, thyme, salt, and pepper. Shake well to combine.
In a large shallow salad bowl, add the lettuce and radicchio torn into bite size pieces. Add just enough vinaigrette to moisten the lettuce. Toss in the celery, shallots, fennel, cheese, and orange segments. Add more vinaigrette and seasoning to your taste.
