Homemade granola is my favorite. Just add fresh fruit, yogurt or almond milk and you have a delicious start to your day.

Ingredients
4cupsorganic old fashioned oats
1cupwalnuts, roughly chopped
1/2cupraw sunflower seeds
1/2cuptoasted pumpkin seeds
1cupunsweetened shredded large flake coconut
1/2teaspoonkosher salt
1/2teaspoonCeylon cinnamon
2oranges, grated zest
4oz.unsalted butter
7 ozmaple syrup
Instructions
Preheat oven to 300 F. Position the racks on the top and bottom third of the oven. Line two baking sheets with parchment paper.2. In a large bowl combine oats, walnuts, sunflower seeds, pumpkin seeds, coconut flakes, salt, cinnamon, and orange zest.3. In a small sauce pan, melt the butter over low heat. Remove from heat and whisk maple syrup into the melted butter. Pour the mixture over the oat mixture and combine well. Stirring until everything is well coated.4. Divide the mixture between the two baking sheets. Spreading it out to make a thin even layer. 5. Bake for 40-45 minutes. Stir and rotate pans after the first 25 minutes.6. Granola should be a nice golden color. Cool completely and store in an air tight container at room temperature.
