The first time I visited the Bahamas (last year), I tried a cocktail called “Sky Juice” at a rather rustic food stand. Coconuts were piled up high by the stand and a man was extracting the fresh coconut water from the coconuts to make this delicious Bahamian drink, Sky Juice. The view from this rustic food stand was an overwhelmingly gorgeous beach and the turquoise waters of the Bahamas. Sipping on that Sky Juice with that view was a highlight of my first time in the Bahamas.
I recently returned to Nassau in the Bahamas and was anxious to order a Sky Juice near where I had first discovered the refreshing Bahamian cocktail. Unfortunately, I stopped at the wrong stand this time. My first clue should have been no pile of coconuts in sight. The Sky Juice was just not the same, quality of ingredients and maybe ratios were just not right. Upon my return home, I did a little research, trial and error to recreate the Sky Juice of my dreams from my first visit to the Bahamas.
First step was to extract coconut water from a coconut. Little did I realize how easy this is, simply take a screwdriver and poke it into the “eyes” at the end of the coconut. (since I had never done this I Googled it). Then once all the water was out I cracked open my first coconut. (Google for the details, it is easy). I must admit I was a little thrilled by cracking open a coconut and felt very boss! The next steps are a matter of combining a few ingredients, mixing and garnishing with a tropical fruit, I used mango spears.
Even though it’s still winter, it’s okay to conjure up your Bahamian travel memories or winter chaser vibes and mix up a Sky Juice, guaranteed to make you smile and dream of warmer days ahead.

Bahamian Sky Juice
Ingredients
- 2 oz. Pale Rum
- 1 oz. Sweetened Condensed Milk
- 6 oz. Coconut Water
- Tropical Garnish I used a Mango Spear, optional
Instructions
- Add rum, condensed milk and ice to a cocktail shaker. Shake for a good 10 seconds.
- Pour into a cocktail glass with fresh ice and top with coconut water, stir. Garnish with a mango spear.
