St.Francis Sonoma County Chardonnay paired with a

St.Francis Sonoma County Chardonnay paired with a Late Summer Tomato, Crab, & Sweet Corn Salad created by St. Francis Winery Executive Chef Peter Janiak.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Summer Tomato, Crab, & Sweet Corn Salad
Serves 4
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
1/2 cup crème fraiche
1 lime, zested and juiced
2 ears of corn (shucked, boiled for 4.5 minutes, cooled to room temperature and shaved off the cob)
6 oz. Dungeness crab (I used jumbo lump crab meat because I live on the east coast)
1 Fresno Chile, finely diced
1/2 teaspoon fresh cilantro, chopped + additional for garnish
4 heirloom tomatoes
12 cherry tomatoes
Fresh basil leaves for garnish
1 teaspoon chives, chopped
2 tablespoons toasted almonds, chopped
Salt & pepper
Extra virgin olive oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
1. Mix together the crème fraiche, lime zest & juice and season with salt & pepper.
2. In a medium bowl mix together the crab, corn, Fresno Chile, and chopped cilantro. Light coat with the lime crème fraiche sauce, reserving some sauce for garnish.
3. Slice and arrange the tomatoes on individual serving plates and drizzle with extra virgin olive oil and salt.
4. Spoon the crab and corn mixture over the tomatoes.
5. Garnish each plate with lime-crème fraiche sauce, basil, cilantro, chives and toasted almonds.
Serve and enjoy with a glass of St. Francis Sonoma County Chardonnay!

The grapes to craft this wine come from St. Francis estate vineyards in Sonoma Valley and the Russian River Valley, and growers from Carneros and Alexander Valley. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The wine spent seven months in French oak with stirring of the lees by hand and undergoing partial malolactic fermentation.⠀⠀⠀⠀⠀⠀⠀⠀⠀
The result is a Chardonnay with notes of lemon, pear, and tropical fruits on the palate, a creamy mouthfeel with a balanced body, acidity, and a lingering finish.⠀⠀⠀⠀⠀⠀⠀⠀⠀

The fruit to produce this wine comes from St. Francis estate vineyards in the Sonoma and Russian River Valleys and growers in the Dry Creek and Alexander Valleys. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The wine was aged 18 months in 100% French oak, 20% new.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Jura is a tiny wine-growing region located in east

Jura is a tiny wine-growing region located in eastern France between Bourgogne and Switzerland. My introduction to the area starts with these two wines from Francois Rousset-Martin. They are crafted in a blended method of reductive aging and the Jura traditional Vin Jaune method of controlled oxidation, similar to Sherry’s flor.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Neither of these wines is a true “Vin Jaune,” but they are a great beginning to acquaint the palate with flavors of walnut, hazelnuts, beeswax, oriental spices, cheese rind, and brine sometimes found in the oxidative Vin Jaune wines from Jura.⠀⠀⠀⠀⠀⠀⠀⠀⠀
